Bondi Junction Sydney Nutritionist: Moroccan Chicken Avocado Salad

Bondi Junction Nutritionist: A healthy salad can be a satisfying meal on its own or a perfect partner to accompany a main dish.However you decide to eat your salad, why don’t you start it today with my healthy one.

 

Ingredients For The Moroccan Chicken Avocado Salad

Serves 2-3

  • Half a free range chicken breast
  • 1 tbsp. mixed Moroccan spices (cumin, paprika, turmeric, cayenne pepper, garlic powder, oregano)
  • 1 pinch of salt
  • 1 tbsp. of coconut oil
  • 10 or so cherry tomatoes
  • 2-3 large leafs of lettuce
  • ¼ Spanish onion
  • 1 avocado
  • Fresh parsley
  • 2 tbsp. olive oil
  • ½ tbsp. Dijon mustard
  • 2 tbsp. lemon juice
  • Pepper to taste

Optional:

  • Red pepper

 

The Steps To Make My Moroccan Chicken Avocado Salad

Step 1:Wash your hands.

Step 2:Place all the ingredients you need in front of you.

Step 3:Heat frying pan with coconut oil on a medium heat, cut up chicken breast into slices and add to frying pan

Step 4:Add half of the spice mix with a little salt to the chicken, let fry for a few minutes then add the rest, cook for a further 3-5 minutes or until the chicken is cooked through (so no pinkness in the middle)

Step 5:Wash all salad mix first

Step 6:Cut up lettuce, tomatoes, onion, avocado into strips, then chop the parsley

Step 7:In a small bowl whisk together olive oil, lemon juice, mustard, salt, and pepper.

Step 8:Roughly mix all the salad ingredients into a big bowl, and then divide the salad into smaller bowls.

Step 9:Finally add the chicken, and then drizzle with salad dressing

Step 10: Serve and enjoy
