Bondi Junction Nutritionist- This recipe reminds me of when I was little, I used to help make this with my mum when I lived in Scotland, so yeah this recipe has fond memories.

Everyone loves carrot cake, so I have made a healthy option for this Easter, you don’t really need any cooking skills, all you need is about 20 minutes to prepare and let the oven do the rest.

Easter is about coming together friends and family, why not make this easter a healthier one.

Five Tips For Eating Healthy At Easter:

  • Don’t eat chocolate until Easter Sunday
  • Go for quality not quantity
  • Choose smaller eggs
  • Balance your kilojoule intake in other meals
  • Eat real eggs

 

Ingredients For My Healthy Easter Carrot Cake Recipe

 Serve 10+

  • 500g of grated fresh carrot
  • 3 eggs
  • 300g almond meal
  • 120g of honey
  • 1 cup of mixed raisins
  • 60 ml of extra virgin oil
  • 2 tsp. vanilla extract or paste
  • 2 tsp. cinnamon
  • 2 teaspoons gluten free baking powder

Step 1:Wash your hands.

Step 2:Place all the ingredients you need in front of you.

Step 3: Pre heat oven to 170C

Step 4: Lightly grease a 20cm round cake pan, with either butter or oil, then place non-stick baking paper in it, making sure it is pushed into the edges

Step 5: Mix together grated carrots, eggs, almond meal, honey, mixed raisins, olive oil, vanilla extract or paste, cinnamon and finally gluten free baking powder.

Step 6:Pour mixture into the round cake pan.

Step 7: Bake in the oven for approximately 1 hour, and then set aside for 5 minutes.

Step 8: For icing I would use fresh Greek yoghurt with a sprinkling of icing sugar.

Step 9: Serve
