Bondi Junction Sydney Nutritionist: Pesto Chicken Pasta

Bondi Junction Nutritionist-This is a really great meal that I usually prepare a few times a month after I have been swimming with my kids after school. (It’s usually busy busy time picking up the girls then rushing to the pool for lessons).

The secret is to make the pesto sauce in advance, and freeze it. (I usually make loads then split them into 5-6 freezer bags). Then when you get home get the kids set up for homework, sort out a few healthy snacks. Then all you have to do is get the pesto sauce from the freezer, and let it soften, boil the pasta and broccoli and lightly fry the chicken.

Ingredients For The Pesto Chicken Pasta

Serves 4

  • 250 grams of penne riagate pasta
  • 1 tbsp. of olive oil
