Bondi Junction Sydney Nutritionist: Pesto Chicken Pasta

Bondi Junction Nutritionist-This is a really great meal that I usually prepare a few times a month after I have been swimming with my kids after school. (It’s usually busy busy time picking up the girls then rushing to the pool for lessons).

The secret is to make the pesto sauce in advance, and freeze it. (I usually make loads then split them into 5-6 freezer bags).Then when you get home get the kids set up for homework, sort out a few healthy snacks. Then all you have to do is get the pesto sauce from the freezer, and let it soften, boil the pasta and broccoli and lightly fry the chicken. 

 

Ingredients For The Pesto Chicken Pasta

Serves 4

  • 250 grams of penne riagate pasta
  • 1 tbsp. of olive oil
  • 2 organic chicken breasts
  • Salt & pepper to taste
  • 10 heads of broccoli

Pesto Sauce

  • ½ cup of pine nuts
  • 3-4 garlic
  • 3 cups of fresh basil
  • ½ cup of grated Parmesan
  • ½ cup of extra-virgin oil
  • Salt & pepper to taste

 

The Steps To Make My Chicken Pesto Pasta

Step 1:Wash your hands.

Step 2:Place all the ingredients you need in front of you.

Step 3:Cook pasta according to the packet

Step 4:Meanwhile add all the ingredients for the pesto sauce in a food processor or even hand blender, and blitz until smooth

Step 5:Cook the chicken for 6-8 minutes on a medium heat until cooked through (so no pinkness in the middle if unsure)

Step 6:when finish slice up in to mouth size pieces

Step 7:Boil the broccoli for appro. 3-4 minutes

Step 8:Finally drain the pasta and add all the ingredients together and stir, garnish with Parmesan, salt and pepper.
