Bondi Junction Sydney Nutritionist: Slow Cooked Fajitas
Bondi Junction Sydney Nutritionist-Get ready to dust of the slow cooker!! I really think these are a great idea, especially in winter. The slow cooker takes about 20 minutes to organise and then that is it. Toss it all in and then expect to have a delicious meal 8-10 hours later.
The best thing is that there is always leftovers so expect to enjoy this meal over and over again for lunch or even post workout. It’s a great source of protein and bursting with taste.
Ingredients For My Slow Cooked Fajitas
- 1kg-1.5kg of good quality grass feed Beef Shoulder
- 2 tsp. of chilli powder (reduce if you don’t’ want it to hot)
- 2 tsp. of cumin (we love this add more if you do to)
- 1-2 tsp. of coriander
- ½ tsp. of salt
- ¼ tsp. of black pepper
- 2 tablespoons of gluten free soy sauce
- 1 -2 jalapeno peppers, seeded and chopped
- 2 cloves of garlic roughly chopped
- 4 peppers any colour (remove seeds)
- 1 onion roughly chopped
The Steps To Make My Slow Cooked Fajitas
Step 1:Wash your hands.
Step 2:Place all the ingredients you need in front of you.
Step 3:Mix all dry spices together (chilli, coriander, cumin, black pepper)
Step 4:Brown the beef shoulder in a frying pan for a few minutes
Step 5:Cut up all the vegetables (peppers, onions, garlic) and place them at the bottom of the slow cooker
Step 6:Sit the beef shoulder on top of the cut up vegetables
Step 7:Rub all the dry spices mix on the beef and sprinkle on the soy sauce
Step 8:Turn slow cooker on LOW and cook for 8-10 hours or until the beef is easily shredded with a fork
Step 9:Drain the meat and vegetables then serve
I would normally use gluten free wraps from the supermarket, with some grated cheese, fresh avocado, more coriander, a squeeze of lime, fresh spinach leaves, sour cream and even more jalapenos.
What every you don’t use divide up into small freezer bags and use for lunches during the coming weeks!
