Eastern Suburbs Sydney Nutritionist: “Quinoa Salad”

Eastern Suburbs Sydney Nutritionist -This is a high fibre salad, which can be used for afternoon lunch or to complement an evening meal. It’s a good source of vitamin C and E, which will support your immune system.

Ingredients For My Quinoa Salad

  • 500 ml (2cups) water
  • 150 (1 cup) quinoa, rinsed, drained
  • Olive oil spray
  • 1 carrot finely sliced
  • 100g of fresh spinach leaves
  • 1/4 cucumber roughly chopped
  • 40g (1/4 cup) sunflower seeds kernels
  • 4 shallots trimmed, thinly sliced
  • 2 tablespoons chopped parsley
  • 1 ½ tbsp. fresh lemon juice
  • 2 tsp. honey
  • 2 tsp. olive oil
  • 1 tsp. paprika


The Steps To Make My Quinoa Salad

Step 1: Wash your hands.

Step 2: Place all the ingredients you need in front of you.

Step 3:Combine water quinoa in a large saucepan over medium- high heat. Bring to the boil. Reduce heat to low. Cover and simmer for 12-15 mins or until liquid is absorbed. Transfer to a large bowl. Set aside to cool.

Step 4: Meanwhile, cut up all the ingredients, and add sliced carrots, spinach leaves, cucumber,shallots, sunflower seeds,and parsely to the quinoa.

Step 5: Whisk the lemon juice, honey, oil and the paprika in a small bowl until well combined. Add the dressing to the quinoa mixture, Season with salt and pepper toss to combine.
