Randwick Nutritionist Healthy Chicken & Pumpkin Lasagne
Nutritionist Randwick- This Healthy Chicken & Pumpkin lasagne recipe is one of my favourite mid-week meals and it takes no time at all to prepare. I made this meal about 20 minutes before i picked my children up from school, I popped it in the oven, and it was ready when I got home. It may take a bit of time to organise if it’s your first time to make this Healthy Chicken & Pumpkin lasagne, or if your not used to cooking or preparing food( trust me you don’t need to be Jamie Oliver), but after you have made it a few times, you will be surprised on how quickly and easy it is to prepare.
Ingredients for Healthy For Healthy Chicken & Pumpkin Lasagne
- 200 gm of Spinach
- 100ml Thick Cream
- 1 Egg
- 100g of Chicken Breast
- 1/2 Butter Pumpkin deseeded
- 400g of tomatoes
- 250 Ricotta
- Chopped Parsley
The Steps To Make My Healthy Chicken & Pumpkin Lasagne
Step 1:Preheat Oven.
Step 2:Chopped up pumpkin in 1-2 cm thick slices.
Step 3:Place onto baking tray and spray with olive oil.
Step 4:Bake for approx 20-30 minutes depenings on your oven then remove.
Step 5:Saute onion in pan, then lightly fry chicken.
Step 6:Add tomatoes and the tomato paste then cook for 15 minutes stirring occasionally until thick.
Step 7:Add the herbs.
Step 8:Pour in 1/4 of the sauce into the baking dish.
Step 9:Flatten the chicken then layer it together with the pumpkin and spinach to replicate pasta sheets.
Step 10:Add half of the sauce that remains. Repeat.
Step 11:Whisk the ricotta and the eggs until to smooth.
Step 12:Pour the mixture over the last layer, then bake for 20-30 minute.
Step 13:Serve with leafy greens or steamed green vegetables.
