Randwick Nutritionist- This recipe for my Healthy Turkey Rissoles  is one of my favourite prep meals which I make in bulk every Sunday. I typically have this meal most days for my lunch. It may take a bit of time to organise if it’s your first time you have prepared this, especially if your not used to cooking or preparing food, but after you have made it a few times, you will be surprised on how quickly these Healthy Turkey Rissoles will take to make. These Healthy Turkey Rissoles go really well with my Healthy Baked Vegetable Recipe

Ingredients For Healthy Turkey Rissoles

Ingredients (serves 4):

  • 500g turkey mince
  • 2 cloves garlic, crushed
  • 1 tablespoon dijon mustard
  • 1 handful of fresh basil leaves
  • 1 handful of fresh flat leaf parsley
  • 1/2 cup of rice crumbs
  • 1 egg
  • salt and pepper
  • 1 tsp of butter


The Steps To Make My Healthy Turkey Rissoles:

Step 1: Wash your hands

Step 2: Place all your ingredients out in front of you

Step 3: Get a large mixing bowl, put the turkey mince, garlic, basil, parsley, rice crumbs and egg into a large bowl and mix ingredients with your hands, until all ingredients are combined.

Step 4:Season with salt and pepper  until the mixture is well combined

Step 5: With your hands make the turkey mince mixture into small ball sizes, that fit into the palm of your hand then set aside.

Step 6: Heat the olive oil in a fry pan

Step 7: Place the turkey balls into the pan and press flat approximately 10cm.

Step 8: Cook the rissoles for about 4-5 minutes each side or until cooked through.


I typically make about 8-9 ( so use double the ingredients). Leave a few out and freeze the rest.
