Randwick Nutritionist: Healthy Pistachio Energy Balls

Randwick Nutritionist- This is a little bit naughty, but we had good friends come over for dinner last night, and I thought i would get creative in the kitchen. One of my favourite nuts from all time is pistachio. ( mainly because of a childhood memory which sits fondly in my mind).

My Healthy Pistachio Energy balls  generally have a lot of nutritional health benefits including a good source of protein, which will help you build muscle and curb of hunger cravings.They are high in fibre which will help improve your digestion, thus helping with weight management.

Pistachio’s  are also a fantastic source of good fats which is great if your looking to protect your self from getting diabetes or improve hypertension.

Ingredients For My Healthy Healthy Pistachio Energy Balls Recipe:

1 ball equals 1 serve

  • 1 cup pistachio (meats, shelled)
  • 1 tsp grated lemon
  • 1 1/4 cup coconut flour (sifted or very fine works best. Not clumpy)
  • 1/3 to 1/2 cup creamy almond butter
  • 1/4 cup maple syrup
  • 1/2 to 1 tsp lemon extract
  • 1/2 tsp vanilla extract
  • dash of cinnamon

The Steps To Make My Healthy Pistachio Energy Balls Recipe:

Step 1:First grind up your pistachios in a food processor or blender (don’t make it into a complete powder)

Step 2:Next, grate your lemon to form a bit of lemon zest.

Step 3:In large bowl, add in all your dry ingredients (flour, nuts).

Step 4:Then mix in your nut butter, and last the lemon zest, honey or maple syrup, and extracts.

Step 5:This is the fun part and the kids can get involved. Mix with your hands, make them into a size just smaller than a 20 cent, take your time as it can get a little messy.

Step 6:Place in the fridge or pop it in the freeze to save for later!
