Randwick Nutritionist:Tasty Fish Pie

Randwick Nutritionist- I made this little number last week. One of my good friends gave me the recipe, as I was looking for a winter warmer. I really liked making this recipe because of all the beautiful fresh fish it had in it, and I hope you do too.

Ingredients For My Tasty Fish Pie

  • 1 fillet of white fish
  • 1 fillet of salmon
  • 3-4 Australian prawns
  • 3 boiled eggs
  • 4 shallots diced
  • 4 large potatoes
  • 1.5 cups of milk
  • 4 cloves
  • 1 bay leaf
  • 30g unsalted butter
  • 1.5 cups of flour
  • 100g of thick cream
  • 1 pinch of nutmeg
  • 2 tablespoons dried dill
  • 2 tablespoons of dried parsley

The Steps To Make My Tasty Fish Pie

Step 1: Wash then peel the potatoes, chop them into smaller pieces then boil until soft, drain then add some milk, salt and pepper then mash until creamy. Set aside.

Step 2: Boil the eggs for approximate 7-10 minutes or until hard, set aside.

Step 3:Put the cloves, chopped up shallots, bay leaf and diced up fish into a medium sized saucepan with the milk. Bring to a boil. Then reduce heat and simmer for approximately 8 minutes.

Step 4:Remove the fish, strain the cooking liquid into a jug, discarding any other solids including the bay leaf.

Step 5:With a fork flake the fish into large chunks, discarding any bones if any.

Step 6: Place all the ingredients into a casserole bowl with the boiled eggs and prawns, and then add salt and pepper, set aside.

Step 7: On a slow heat melt the butter in a saucepan, add flour and cook, stirring continually for 1-2 minutes then add the liquid from the jug stirring until the mixture becomes thick. Add the cream and simmer for approximately 5 minutes. 

Step 8: Add nutmeg and remaining herbs, then pour over the fish, then cool.

Step 9: Preheat the oven 180°C

Step 10:Scoop the mash out of the saucepan and evenly cover the top of the fish mixture, approximately 1cm thick.

Step 11: Place in the oven for approximately 20-25 minutes.

Step 12: Remove when the potato is slightly golden brown, like the above image.
