Randwick Nutritionist: Curried Chickpea Patties

Randwick Nutritionist- I fancied something different to eat this week, I was a little bit bored of eating meat, so I decided to make chickpea patties instead. I have never really had much success at making these, because they have either fallen apart or they have tasted very bland. However this time I have nailed it! 

Ingredients For The Healthy Curried Chickpea Patties

  • 1/3 of a cup of olive oil
  • 3 shallot diced
  • 2 -3 garlic cloves
  • 400g of dried chickpeas
  • 1 carrot coarsely grated
  • 1 zucchini coarsely grated
  • 3/4 of a cup of rice crumbs or (bread crumbs)
  • 1 bunch of mint chopped
  • 1 bunch of coriander chopped
  • 1 tablespoon of peanuts crushed 
  • 1 egg
  • 4 teaspoons of curry powder

The Steps To Make My Healthy Curried Chickpea Patties

Step 1:Wash your hands.

Step 2:Place all the ingredients you need in front of you

Step 3: Boil a kettle

Step 4: Put the dried chickpeas in a large saucepan with the boiled water on a medium heat for approximately 45 minutes or until the chickpeas are soft.

Step 5: Meanwhile chop up the shallots, coriander, and mint and coarsely grate the zucchini and the carrot, and place them to one side.

Step 6: Crush the peanuts in a pastel and mortar.

Step 7:When the chickpeas are soft, drain them and then place them in a food processor with the olive oil, shallots, coriander, and mint and coarsely grate the zucchini and the carrot, then pulse for 60 seconds.

Step 8; Add the egg then pulsed for approximately 60 seconds, add the curry powder and rice crumbs, then continue to pulse until the mixture is combined.

Hint: This may take some time so be patient, if the mixture is not formed enough add some more rice crumbs, and keep pulsing until the mixture is sticky otherwise it will fall apart on the frying pan.

Step 9:With you hands take out tennis ball size patties and flatten them down; I actually used a burger press , which made the job a whole lot easier.

Step 10: Put the patties in the fridge for 20 minutes

Step 11: With a large frying pan on a medium heat, fry the chickpeas on both sides until toasted.

Step 12: Enjoy with some steamed vegetables
