Randwick Nutritionist: Zucchini Fritters

Randwick Nutritionist: It gets to the end of the week, and I am always struggling to think of new ways to cook up any lingering vegetables that I have not used during the week. So this week I have 4-5 zucchini’s, which have almost seen better days. So I have decided to make some healthy zucchini fritters. Lets go!

Ingredients For My Zucchini Fritters

  • 4-5 fresh zucchini’s
  • 1/4 cup of all purpose floor
  • 1/4 cup of parmesan cheese
  • 2 cloves of garlic
  • 1 large egg (beaten)
  • 2 tablespoons of olive oil
  • Salt & pepper

Ingredients For My Healthy Posy Workout Smoothie 100ml water 1 scoop of good quality protein powder 1 banana 1 handful of spinach 2 tbsp. of good quality nut butter 1 tbsp. cacao nibs or dark cocoa powder The Steps To Make My Healthy Post Workout Smoothie Step 1:Wash your hands. Step 2:Place all the ingredients you need in front of you. Step 3:Place all the ingredients in the blender. Step 4:Screw the head of the blender on tight, place the cup and attached head to the motor and blitz for approximately 20-30 seconds or until the smoothie is smooth to drink. The Steps To Make My Healthy Zucchini Fritters

Step 1:Wash your hands.

Step 2:Place all the ingredients you need in front of you.

Step 3:Place grated zucchini in a colander over the sink. Add salt and gently toss to combine.

Step 4:Let the grated zucchini’s sit for 10 minutes. Using a clean dishtowel drain zucchini completely.

Step 4:In a large bowl, combine zucchini, flour, Parmesan, garlic and egg; season with salt and pepper, to taste.

Step 5:Heat olive oil in a large frying pan over medium high heat. Place approximately two tablespoons of batter for each fritter, flattening with a spatula, and cook until the underside is nicely golden brown, about 2 minutes. Flip and cook on the other side, about 1-2 minutes longer.

Step 6: Garnish with herbs of your choice.
